Our current iteration of this blend comes from two co-ops: 33% Honduras COMSA Natural / 66% Colombia El Bombo Washed. We've been using up thousands of pounds certified organic coffee from El Bombo (formerly ASOBOMBO) for the last few years in both Levity and Intensity Blend. The Honduras Natural brings in a great added fruit sweetness. The roasts in this blend are developed longer than our single origin coffees.
We generally aim for chocolate notes and stone fruit sweetness when crafting this blend. It’s ideal for our daily café espresso use, for home espresso, and as a rich, balanced every-morning coffee too.
We called this blend Levity because we're hoping it's tasty, uplifting and frivolous. There may have been a wild brainstorming session in which levity-lever-espresso machines were involved. (We spent a lot of years serving lever machine espresso!)
